Your culinary adventure begins in the morning as you meet your local cooking instructor. Together, you will explore a vibrant traditional marketplace filled with colorful displays, lively sounds, and unforgettable aromas. Here, you will learn the art of selecting the finest local ingredients while discovering the secrets behind Ethiopia’s iconic spices, including the fiery and complex Berbere, the sharp intensity of Mitmita, and a variety of fresh local herbs that create the distinctive depth of Ethiopian cuisine.

Returning to the cooking space, your hands-on culinary training begins. You will learn the highly specific traditional preparation of chicken required for authentic Doro Wat. From there, you will master one of the most essential foundations of Ethiopian cooking: slowly simmering finely chopped onions for hours without oil to create a deeply rich and caramelized flavor base that defines the dish.

After enjoying a delicious traditional lunch, you will turn your attention to the heart of every Ethiopian meal Injera. Learn how to mix nutrient-rich, gluten free ancient Teff flour with water to begin the natural fermentation process that gives Injera its unique flavor and texture. The day concludes with a relaxing and aromatic Ethiopian coffee ceremony before settling into an overnight stay at a local eco lodge or with a welcoming host family.

Day 2: The Fire of the Mitad & The Communal Feast

Awake refreshed and ready to complete your culinary masterpiece. Today, you will take on one of Ethiopia’s greatest culinary traditions: baking Injera on a Mitad, the large traditional clay stove used throughout the country. Watch as the fermented batter is poured in graceful concentric circles while the signature “eyes” (tiny bubbles) rise across the steaming flatbread. At the same time, you will finalize your Doro Wat by adding your perfectly balanced spice blends, slow-rendered Niter Kibbeh (spiced clarified butter), and boiled eggs, allowing the stew to simmer into deep, velvety perfection.
