- The Roasting & The Aroma: The ceremony begins with a bed of fresh aromatic grasses (Ketema) spread on the floor. Raw green coffee beans are carefully washed and roasted on a flat pan over an open charcoal brazier. Once the beans turn dark and oily, the pan is passed around so you can waft and enjoy the rich, fragrant smoke.
- The Brewing: The roasted beans are ground using a traditional mortar and pestle and transferred into a clay pot called a Jebena. Water is added, and the coffee is brought to a boil over the charcoal.
- The Three Rounds: The coffee is skillfully poured from high above into small ceramic cups (Sini) without spilling. It is served alongside popcorn, roasted barley (Kolo), or dates, accompanied by burning frankincense. To experience the ritual fully, you will enjoy three distinct rounds, each holding its own spiritual blessing: Abol (the strong first brew), Tona (the smooth second brew), and Baraka (the third brew, meaning “the blessing”).
